Seared Wagyu Sashimi

Only the surface is seared, locking in the flavor. Enjoy the melt-in-your-mouth texture of the lean meat, together with the smoky aroma of the sear and truffle soy sauce.

Halal Wagyu Grand Platter (two pieces of each cut)

Filet, brisket, skirt steak, and rib loin. With no side dishes to distract, this course lets you savor the wagyu itself, grilled to your own preferred doneness — simple, and deeply satisfying.

“What the restaurant across the street taught us.”

Just across the street from our restaurant is a halal establishment. Since we opened ten years ago, seeing the owner’s family and staff there day after day has taught us — not from books, but as people — what halal truly means, and how deeply important dietary practice can be to someone’s life.

That soy sauce can contain alcohol. That even a single piece of kitchen equipment requires careful attention. These were things we never would have noticed from a book alone.

Dietary rules aren’t mere restrictions — they’re a reflection of how someone chooses to live. To respect a person’s dietary practice is, we believe, to respect their life. We wanted to bring the best meat experience of a lifetime to as many people as possible, across differences of religion and culture. “Shin” carries our wish to face the ingredient itself, honestly and without pretense.
